Strawberry Muffin



Strawberry Muffin
Ingredients
2 eggs
½ cup milk
¼ cup butter, softened, shortening or vegetable oil as desired
1 ½ cups sifted all-purpose flour
½ cup sugar
1 teaspoon vanilla
 2 teaspoons baking powder
 ½ teaspoon salt
1 cup cut fresh strawberry , or ¾ cup frozen strawberry
¼ cup brown sugar + 1 tablespoon cinnamon mixed
Directions
* Preheat an oven to 350 ° F (175 degrees)
* Mix eggs, milk, butter and vanilla well together
* Mix dry ingredients, sugar, flour, baking powder and salt together
* Add egg mixture to dry mixture and mix well
* Add cut strawberries and mix gently
* Spoon the batter into prepared cupcake or muffin liners 2/3 full
* Sprinkle cinnamon brown sugar mixture to cover the top of muffins
* Bake for 20 – 25 minutes or until a toothpick inserted into the cake comes out clean
* Cool in the pans for 10 minutes, remove to cool completely on a wire rack
