Banana Muffin



Banana Muffin
Ingredients
½ cup butter or vegetable oil as desired
 1 cup sugar
 4 medium sized bananas, equivalent to 1 ½ cups mashed banana
 2 beaten eggs
 1 ½  cups sifted all-purpose flour
 1 teaspoon baking powder
 1 teaspoon baking soda
 1 teaspoon vanilla ½ teaspoon salt
 ¼ cup firmly packed brown sugar
 ¼ cup finely chopped walnuts or more as desire
Directions 

* Preheat an oven to 350 ° F (175 degrees)
 * Mix sugar, oil, eggs and bananas together
* In another bowl combine flour, baking soda, baking powder and salt
* Add  flour mixture over banana mixture, add vanilla and mix well
* Spoon the batter into prepared cupcake or muffin liners 2/3 full
* Sprinkle walnut on top  of muffins,  sprinkle brown sugar
* Bake for 20 minutes or until a toothpick inserted into the cake comes clean.
* Cool in the pans for 10 minutes before removing to cool completely on a wire rack
