Peas, Rice and Chicken
Ingredients
1 Whole chicken, cooked
2 cups long rice, inundated in water for an hour
1/3 cup vegetable oil
1/3 cup butter flavored shortening
1 pound bag frozen sweet peas
1 teaspoon Curry
½ teaspoon turmeric
2 teaspoon salt

½ teaspoon white pepper
2 ½ cups water or chicken broth  
Directions
* In a pot over high heat, place oil and shortening, and melt
* Add peas and saute for 5 minutes
* Add water or chicken broth, salt, white pepper, curry and turmeric, bring to boil
* Rinse the rice, drain from water and add it into the boiling water. Cook till the water almost dries
* Reduce heat to very low, cover the pot and cook for 10 – 15 minutes till rice is tender
* Pour it into serving dish, place cooked and hot chicken over the rice, garnish with roasted almond and serve hot with salad
Roasted almond to garnish
