Mexican Potato Tacos



Mexican Potato Tacos
Ingredients
1 tablespoon vegetable oil
1 large sized potato without peeling , cut into ½-inch thick
circles
Salt and pepper as needed

½ tablespoon vegetable oil
¼ pound (110 g) ground lean beef red meat
½ (15 oz) can black beans

1 tablespoon taco seasoning mix 1 tablespoon water

1 cup cheddar or mozzarella cheese
¼ cup chopped lettuce
1 small tomato, chopped

¼ cup sour cream 
  Directions
* Preheat an oven to 450 F
* Mix potato slices, 1 tablespoon oil, salt, and pepper
* Arrange potato slices in single layer in an greased baking sheet
* Bake the potatoes till tender and golden brown about 20 minutes
* In the meantime, put ½  tablespoon oil in a frying pan over medium heat
* Add the meat, cook till done and have crumbs, throw away the excess fat
* Add the beans, water and taco seasoning, stir and bring to boil
* Reduce the heat,  cover and let the mixture boil for 5 minutes
* Arrange potato pieces in a plate, sprinkle half the amount of cheese
* Add meat and beans mixture over them
* Add the rest of the amount of cheese, put the lettuce, tomatoes, and sour cream

* Serve hot
