Blueberry Muffin



Blueberry Muffin
Ingredients
2 eggs
½ cup milk
¼ cup butter, softened, shortening or vegetables oil as desired
1 ½ cups sifted all-purpose flour
½ cup sugar
1 teaspoon vanilla
 2 teaspoons baking powder
 ½ teaspoon salt 1 cup fresh blueberries, or ¾ cup frozen blueberry
¼ cup brown sugar
Directions

* Preheat an oven to 350 ° F (175 degrees)
* Mix eggs, milk, butter and vanilla well together

 * Mix the dry ingredients, sugar, flour, baking powder and salt together
* Add egg mixture to flour mixture and mix well
* Add cup blueberry and mix gently by hand
* Spoon the batter into prepared cupcake or muffin liners 2/3 full
* Sprinkle brown sugar to cover the top of muffins
* Bake for 20 – 25 minutes or until a toothpick inserted into the cake comes out clean
* Cool in the pans for 10 minutes before removing to cool completely on a  wire rack
