Potato Soup



Potato Soup
Ingredients
 2 large sized potatoes without peeling (equivalent to 600 g) diced
1 cup chopped onion
1/3 cup vegetable oil

1 cup heavy whipping cream
 2 cups milk
 2 cups chicken broth (or 2 cups water + 2 bouillon cubes)
 ½ teaspoon turmeric
Salt - pepper as needed

Mozzarella cheese
Directions
* On high heat in a saucepan heat oil, add onion and saute for 5 minutes
* Add potatoes and saute for 5 minutes while stirring

* Add water and bouillon cubes or chicken broth, reduce heat to medium low, cover and cook for 10 minutes till the potatoes are tender
* Place potato mixture in a blender and mix till smooth
* Pour the mixture again into the saucepan, add milk, cream, salt and pepper and turmeric and boil for 2 minutes
* Pour the soup into serving plates, sprinkle the cheese over it and serve hot
