Banana Lemon Cake



Banana Lemon Cake
Ingredients
Cake Ingredients
 ¾ cup butter softened, shortening or vegetable oil
 1 ½ sugar
 3 eggs
 1 ½ teaspoon Vanilla
 1 cup mashed banana equivalent to two medium sized bananas
 2 ¼ sifted all-purpose flour
 1 teaspoon baking soda
 ¼ teaspoon salt
 ¾ cup of plain yogurt
Lemon Icing Ingredients
½ cup shortening

 ½ cup butter, softened
3 tablespoons fresh lemon juice
1 teaspoon grated lemon peel
4 cups confectioners powdered sugar
Directions
Lemon Icing Directions
* Mix shortening and butter together until smooth
* Add lemon juice and grated lemon peel and mix well

*  Add sugar gradually will mixing at low speed, then on high speed mix till smooth (we can add ¼ teaspoon lemon juice if the mixture is little dry)
* Place in a bowl and cover with a damp cloth until use
Cake Directions
* Preheat an oven to 350 F (175 C)
* Mix butter and sugar well, then add the eggs, vanilla and mashed bananas and mix well

* In another bowl combine flour, salt and baking soda
* Add flour mixture and plain yogurt alternately while mixing on low speed, then mix well until smooth
* Pour the mixture into two greased and floured 9 x 1½ inch round Cake
Pan
* Bake each pan for 25 – 30 minutes, or until toothpick inserted in center comes out clean
* Cool 10 minutes, remove from pans, cool completely on wire rack.
*Fill and frost layers with icing, put fresh banana pieces between layers as desired
