Moist Chocolate Cake



Moist Chocolate Cake
Ingredients
1 ½ cups sifted all-purpose flour
1 cup sugar
1 teaspoon baking soda
½ teaspoon salt
2 squares (1 oz each) unsweetened baking chocolate ( or 6 tablespoons unsweetened Cocoa + 2 tablespoons butter melted together without boiling)
2 tablespoon butter
1 cup buttermilk or plain yogurt
½ cup vegetable oil
1 egg
1 teaspoon Vanilla

Directions
 * Preheat an oven to 350 Fahrenheit (175 degrees)
* In a separate bowl mix flour, baking soda, salt and sugar
* In a heavy saucepan melt chocolate with 2 tbsp butter, do not boil, keep aside
* Beat buttermilk, oil and egg till smooth
* Add the dry ingredients mixture
* Add chocolate mixture and vanilla, mix well for a minute
* Pour the mixture into greased and floured 8 x 8 x 2 inch Square Pan
* Bake in preheated oven for 30 – 35 minutes, or until toothpick inserted in center and comes out clean.
* Cool 10 minutes, remove from pans, cool completely on wire rack
* Frost with chocolate glaze
