Oat Cake With Broiled Topping
Ingredients
Cake Ingredients
1 ½ cups old fashioned oats
1 ¼ cups boiling water
1 cup sugar
1 cup firmly packed brown sugar
½ cup butter, softened, shortening or vegetable oil as desired
1 teaspoon Vanilla
3 eggs1 ½ cups sifted all-purpose flour
1 teaspoon Baking soda
½ teaspoon Baking powder
½ teaspoon salt
Topping Ingredients
2/3 cup firmly packed brown sugar
¼ cup butter, softened or vegetable oil
¼ cup table cream Nestle
1 cup chopped walnuts
1 cup sweetened coconut flakes
Directions
Topping Directions
* Combine sugar, butter and table cream, mix well at high speed
* Add walnuts and coconut and mix with hand
Cake Directions
* In a small bowl mix oatmeal and boiling water, leave for 20 minutes, stir every once in a while
* Preheat oven to 350 F (175 C)
* In a separate bowl combine white sugar, brown sugar, butter and mix till smooth
* Add vanilla and eggs and mix well
* Add oat mixture, flour, Baking powder, baking soda and salt and mix well
* Pour the mixture into greased and floured 13 x 9 x 2 inch Rectangular Pan
* Bake for 25 - 35 minutes or until toothpick inserted in center comes out clean
* Get out the cake from the oven and immediately spread topping mixture over the cake evenly
* Broil it for 1 to 2 minutes until golden brown
* Place on wire rack and cool completely
