Cheesy Banana Cake



Cheesy Banana Cake
Ingredients
Cake Ingredients
½ cup butter, shortening or vegetable oil as desired

1 ½ cups sugar
 2 eggs
1 teaspoon Vanilla
 2 cups sifted all-purpose flour
 1 teaspoon baking soda
 ¼ teaspoon salt
 1 cup milk
 ½ tablespoon fresh lemon juice
 1 cup mashed banana
Walnuts for topping  (as desire)
 Cheese Frosting Ingredients
 1/3 cup shortening
142 g (5/8 oz) cream cheese
2 1/3 cups confectioners powdered sugar
1 teaspoon Vanilla
Directions
Cheese Frosting Directions
* Mix cheese and butter well together with electronic mixer
* Add powdered sugar and vanilla, mix at low speed for 30 seconds then mix at high speed until smooth
 
Cake Directions

* Preheat an oven to 350 ° F (175 C)
* Mix banana and lemon juice together
* Combine flour, baking soda and salt together
* Mix butter and sugar well, add eggs one by one while mixing
* On low speed add vanilla, flour mixture and milk and mix for ½ minute then on high speed for two minutes
* Fold banana mixture and mix by hand
* Pour the mixture into two greased and floured 9 x 1½ inch round Cake Pan
* Bake each pan for 25 – 30 minutes, or until toothpick inserted in center comes out clean
* Cool 10 minutes, remove from pans, cool completely on wire rack.
*Fill and frost layers with cheese frosting
* Garnish as desired with walnut and cinnamon
